So these appetizer recipes are for those of you that love delicious appetizers but are also trying to eat low carb.

Here is a sample recipe from the book:

 

Cheesy Onion Dip

Serves: 6-8

Time 30 min.

 

Ingredients

1 large cauliflower head,

1 cup full-fat old cheddar cheese, grated

1 cup coconut milk

2 green onions, chopped

4 cloves garlic, finely-chopped

¾ tsp sea salt

Ghee

Crudité

 

Directions

  1. Floret cauliflowers and place them in large pot of water over medium heat.
  2. When water comes to boil, reduce heat to low, cover and simmer for 10 minutes.
  3. Place two tablespoons of ghee in a saucepan and place over medium heat.
  4. Add your garlic, sauté for 30 seconds; add half the green onion, sauté for a minute, set aside.
  5. Place steamed cauliflower in blender along with coconut milk and mix until smooth.
  6. Preheat oven to 400 degrees and brush a medium casserole dish with ghee.
  7. Mix cauliflower, onion, garlic, salt and half the cheese in a bowl and pour into casserole dish.
  8. Top with cheese and bake for 15 minutes, sprinkle with green onions when done and serve with crudité.

Does anyone get the carb fuzzies?

Hey guys,

So does anyone else experience carb fuzzies? I try to stick to Keto, but sometimes on the go there is legit nothing else to eat besides some food that contains an inordinate amount of carbs.

It’s so weird, I can still think and work but my brain feels like what a television looks like when there is bad reception. Like the picture is there but it’s all shaky so I can’t focus. Anybody else experience this?

Ketogenic Eggs Breakfast Cookbook Cover

Bacon and Egg Babes
Prep Time: 10 mins.
Serves: 8

Ingredients
8 pastured eggs
16 strips bacon
Salad Green
16 cherry tomatoes
Sea Salt
Ghee

  1. Preheat oven to 350 degrees and brush an 8-cup muffin tin with ghee.
  2. Slice half the bacon strips in two.
  3. Place two halves of bacon in bottom of cup like an X and then wrap a whole bacon slice around the tin cup.
  4. Crack an egg into your bacon cup,sprinkle with a 1/8th of a tsp of sea salt, repeat with all 8 eggs.
  5. Bake in the oven for approximately 17 minutes.
  6. Serve with salad greens and tomatoes.

 

Russian Caviar Eggs

Russian Caviar Eggs
Prep Time: 15 mins.
Serves: 4

Ingredients:
6 pastured eggs
4 oz. caviar of choice
2 tbsp. ghee
4 tbsp. heavy cream
2 tbsp. chives, chopped
½ tsp Sea Salt

Directions:
1. Crack your eggs into a bowl and whisk.
2. Heat your ghee in a small saucepan over medium heat.
3. Add eggs and whisk so you don’t get a scramble.
4. Once the mixture is creamy, stir in salt, cream and chives, remove from heat.
5. Plate and top with caviar.

World Egg Recipes : Azerbaijan Eggs

Hey everyone,

So eggs are an amazing breakfast choice, they’re full of protein and give your body that much-needed energy in the mornings. Also they’re great for promoting healthy skin, hair and nails … and much more than that. BUTTTT…  I love overeasy eggs or an egg salad but after a few days it can become snooze-worthy. So I researched egg recipes from around the world and compiled 31 of them in a book.

Azeri Pomegranate Pastured eggs

Prep Time: 15 mins.

Serves: 4

 

Ingredients

8 pastured eggs

3 cups pomegranate arils

1 small onion, finely-chopped

Sea salt

4 tbsp coconut butter

 

Serve with

Organic Veggie Chips or Sticks

 

Directions

  1. Place a large frying pan on medium heat; add onion and sauté for a minute.
  2. Add pomegranate arils and cook uncovered for 7 minutes.
  3. Crack each egg separately into the pan, sprinkle with a little salt and cook until pastured eggs are set but still soft in the middle.

 

 

 

 

Low-Carb Breakfast Heuvos Rancheros

Hey guys,

So, I love eggs for breakfast but sometimes it can get boring and so I decided to research into how people in different parts of the world eat their eggs. I loved my research and I loved the results so I put a whole bunch of egg recipes from around the world together and created a book. It will be free on Amazon on Sunday so I will post the link.

Buuut… the following was one of my fave recipes a Mexican version of a gorgeous eggs breakfast, hope you like it. I made it and went mad for it.

Fun Fact: Huevos Rancheros means Ranch Eggs

Mexican Huevos Rancheros
Prep Time: 20 mins.
Serves: 4

Ingredients:
8 pastured eggs
1 medium onion
2 large tomatoes, chopped
3 Anaheim Chilies
½ tsp cumin
½ tsp chili powder
1 tsp adobo sauce
2 tsp sea salt
Ghee

Handful parsley

Directions:
1. Heat 2 tablespoons ghee in large frying pan.
2. Add onion, sauté until translucent.
3. Add chilies, sauté for a minute.
4. Add tomatoes, cumin, adobo, chili and sea salt.
5. Cover and simmer on low for 15 mins.
6. In a frying pan set over medium heat, add two tablespoons of ghee.
7. Drop each egg individually into the pan and fry until egg yolks are set as you like.
8. Plate sauce, top with fried eggs and sprinkles of parsley, serve hot and delicious

Broccoli Bazil Amazingness Omelet

Broccoli Tomato Omelet
Prep Time: 10 mins.
Serves: 6

Ingredients
3 cups broccoli florets
6 organic pastured eggs
1 cup cherry tomatoes, halved
1 onion, small, finely-chopped
¼ cup almond milk
½ tsp sea salt
¼ tsp paprika
hanful basil, cleaned
Extra virgin olive oil

8 Bib Lettuce leaves

Directions
1. Whisk your whole eggs in a bowl with almond milk, salt and paprika.
2. Add 3 tsp extra virgin olive oil over medium heat.
3. Add onion, sauté for 30 seconds, add tomato, saute another 30.
4. Add broccoli, sauté for two minutes.
5. Pour eggs over veggies, cook for 2 minutes.
6. Flip and sprinkle basil on top, cook for a minute.
7. Serve atop lettuce leaves.

Sweet’n Savory Avocado Tart

 

Creamy Avocado Pie

 

There is something about the combination of sweet and salty coming together in one delightful morsel that creates a heavenly flavor symphony. That is why I love this Sweet’n Savory Avocado Tart. Although avocado pie as a dessert is quite fantastic, I developed this recipe as something I could enjoy with a salad for lunch and it is raw so supremely easy to make. The combination of nuts and avocado is quite rich  that is why it’s nice to have with a fresh salad – I felt amazing after this lunch (I swear the nuts and avocado made my skin glow) and had awesome energy right through the afternoon.

Here’s my recipe, I hope you enjoy it!

Sweet’n Savory Avocado Tart
Serve: 8
Prep Time: 10 mins.
Ingredients

The Filling
2 avocados, pitted, peeled, mashed
1/4 cup orange juice
3 tbsp fresh dill, chopped
1/4 cup walnuts, crushed
1/2 cup coconut milk
2 Medjool Dates, pitted chopped
1 tsp salt

The Crust
3/4 cup cashew
1/4 cup almonds
1 tbsp ghee
5 Medjool Dates, pitted, chopped
1/2 tsp salt

Directions

  1. Place crust ingredients in food processor and blend until mealy and coarse.
  2. Press crust mixture into 9″ pie plate and place in freezer for half an hour.
  3. For round two, clean your food processor, add avocado, orange juice, coconut milk, salt, 2 tbsp dill and mix until smooth.
  4. Fold in crushed nuts and chopped dates into creamy avocado.
  5. Pour sweet and salty mixture into your prepared pie plate, return to freezer and allow to set for an hour.
  6. Sprinkle with remaining dill before serving.

Chocolate Almond Flaxseed Paleo Cookies

There is something just deliciously comforting about a chocolate chip cookie and with this new take on an old favorite there’s a whole lot more to feel good about. The almond flaxseed chocolate chip cookie removes nutritionally empty content and adds body essential whole foods to the mix.
The cookies have a strong protein almond flour base and the flaxseed contains Omega-3 fats neccessary for optimal mind and body function. In addition, the dates are a healthy source of sugar and the dark chocolate provides an antioxidant bonus.

Ingredients
1/2 cup flax seed
1/2 cup unsweetened dark chocolate shards
1 cup toasted shredded coconut
1/2 cup Medjool dates, pitted
1/2 cup coconut oil
2 cups almond flour
3 organic eggs
1 vanilla bean
1 tsp sea salt

Directions
1. Preheat oven to 350 degrees and line baking sheets with parchment paper.
2. Place dates and coconut oil in a food processor and mix.
3. Combine all of the dry ingredients in a mixing bowl and then slowly add to mixture in food processor, mixing until all ingredients are combined.
4. Using a tablespoon drop batter onto baking sheets (12 per sheet) and bake for 12 minutes.
