So these appetizer recipes are for those of you that love delicious appetizers but are also trying to eat low carb.
Here is a sample recipe from the book:
Cheesy Onion Dip
Serves: 6-8
Time 30 min.
Ingredients
1 large cauliflower head,
1 cup full-fat old cheddar cheese, grated
1 cup coconut milk
2 green onions, chopped
4 cloves garlic, finely-chopped
¾ tsp sea salt
Ghee
Crudité
Directions
- Floret cauliflowers and place them in large pot of water over medium heat.
- When water comes to boil, reduce heat to low, cover and simmer for 10 minutes.
- Place two tablespoons of ghee in a saucepan and place over medium heat.
- Add your garlic, sauté for 30 seconds; add half the green onion, sauté for a minute, set aside.
- Place steamed cauliflower in blender along with coconut milk and mix until smooth.
- Preheat oven to 400 degrees and brush a medium casserole dish with ghee.
- Mix cauliflower, onion, garlic, salt and half the cheese in a bowl and pour into casserole dish.
- Top with cheese and bake for 15 minutes, sprinkle with green onions when done and serve with crudité.
